PALEO RECIPE – from Elana’s Pantry

I was looking for a salad dressing alternative and ran across this one.

Creamy Avocado Dressing

1 avocado
3 tablespoons olive oil
1 tablespoon lemon juice
1/2 cup water
1/4 celtic sea salt
1/4 black pepper

1. Place avocado, olive oil, lemon juice and water in blender.
2. Puree until smooth thenblend in salt and pepper
3. Serve over green or chopped salad.

Loved the running class! I've been doing some of the drills whenever I can.
The dressing recipe sounds good! I'm gonna have to make it soon.

  2. More info on Paleo (good for you happy hour fans):

Each of these groups has a history of being implicated as allergenic. Also note that we are including all foods made from these substances, (these substances in all forms, milled grains, flours, oils, vinegars), peanut butter, cereal or legume oils (soy, canola, corn), additives, thickeners, grain vinegar and products containing grain vinegar, grain alcohol including grain based vodka, and all beers and ales. The only non-grain based alcohols are 100% Agave tequila and 100% potato vodka. Grape based alcoholic beverages are probably allowed if you know you tolerate them.

  3. I remember in the book that you are not supposed to have any of the following: salt, sugar, and potatoes.

Are you combining the Paleo diet with the Zone diet or modifying Paleo diet just a bit?

I am more curious than anything. I am really strict right now with my Paleo.

    Thanks,
    Dave
